Dratted wrists are making ordinary tasks difficult. Mum's here, making cups of tea etc. We just had some beaut buttery warm scones with home made plum jam for a late afternoon tea. It's Alison Holst's recipe: very simple, very light, very tasty. She's NZ's cooking icon from way back...
2 cups plain flour
4 tsp baking powder
pinch salt
50g cold butter
3/4 cup milk
1/2 cup grated cheddar (Mum's addition for a mild cheesy scone; double that for real cheese scones)
Rub the butter into the dry ingredients. Add cheese, mix with knife and then add milk. Mix with knife. Knead lightly 6-10 times. Makes 9. Put them close together on a tray and they'll have soft sides. 220 degrees for 8-10 minutes. Slather butter and jam. Yum.
